Baked Huon Salmon with a Maple Glaze and Crispy Leek

Ingredients

  • 1 Whole fillet of Huon Salmon
  • 1 Large leek
  • 3 tbsp Olive oil
  • 3 tbsp Canola oil
  • GLAZE
  • 1/4 cup Pure maple syrup
  • 1 1/2 tbsp Soy sauce
  • 1 tbsp Dijon mustard
  • 1 tbsp Brown sugar
  • 1 tbsp Olive oil

Method

    Preheat oven to 180 degrees celsius

    In a bowl, combine all the glaze ingredients and mix well
  3. 3
    Line a baking tray with baking paper. Place the salmon fillet skin side down. Brush over half the marinade onto the fillet

    Bake in the oven for 15 minutes then brush over the remaining marinade.

    Bake for a further 10 minutes, then turn oven onto grill function and cook for a further 5 minutes until the fillet becomes golden. Remove from the oven, let rest for 5 minutes

    Whilst the salmon is cooking, remove the top half of the leek, cut the leek down through the middle lengthways to open. Slice the leek in half and then slice each half into thin strips lengthways

    Heat the oils in a nonstick pan to just above medium heat
  8. 8
    Fry off the leek in batches, do not overcook as it will continue to cook a little once removed. Place the leek onto absorbent paper towel drain excess oil

    To serve, place the cooked salmon carefully onto a serving platter, top with the crispy leek
