Slice the salmon into 3-5cm thick pieces

In a small bowl, mix the black pepper, salt, and five spice together and set aside.

Heat the oil in a medium sized fry pan until the surface starts to shimmer. You want a medium heat or you'll burn the corn flour.

Put the corn flour into a shallow bowl, then add the salmon pieces and toss well making sure the salmon is evenly coated.

Immediately place the salmon into the hot oil and cook for about 2 minutes. Reduce the heat if the corn flour is starting to burn. Turn the salmon pieces over and repeat with the other side and cook until the salmon is starting to turn a golden brown. About 2-3 minutes.

Remove the salmon to a paper towel to absorb and excess oil, then arrange onto serving plates.

Add the green onion and chilli to the fry pan and cook for 30 seconds, then remove and scatter over the salmon. Sprinkle the spiced salt and pepper over the salmon. Serve Immediately.
